Just had to share this recipe with you. It's a great way to make use of your overripe bananas. And it's quick and easy to make.
Ingredients:
2 extra-ripe bananas, peeled
2 cups all-purpose flour
1 cup sugar
3/4 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1 can (8 oz.) crushed pineapple, undrained
2 eggs
1/2 cup vegetable oil
1 tsp. vanilla
1/4 cup maraschino cherries, drained and halved
Creamy vanilla frosting
Directions:
Preheat oven to 350 degrees. In blender, puree bananas. You should have 1 cup. In a large bowl, combine flour, sugar, baking soda, salt, and cinnamon. Add the pureed bananas, crushed pineapple with juice, eggs, oil, and vanilla. Blend well. Stir in cherries. Pour into a greased and floured 13 X 9-inch baking pan. Bake 30 to 35 minutes. Cool. Spread with vanilla frosting. Cut into bars. Makes about 3 dozen bars.
Frosting:
1/4 cup margarine
4 tbsp. milk
3 cups powdered sugar
1 tsp. vanilla
Directions: In a small saucepan, heat margarine and milk until the margarine is melted. Remove from heat and stir in powdered sugar and vanilla. Beat until smooth.
