White Cheddar Beer Cheese Soup Recipe

 
My (ex) mother-in-law made this soup when she came last Thanksgiving, and it was so good.  I'm in the mood for a good soup, so I'm thinking about trying this one.  Got it from Cooks.com. Thought I'd share.

Ingredients:

1/2 c. all-purpose flour
1/3 c. butter
1 garlic clove, pressed
1 tbsp. grated onion
1 tsp. Worcestershire sauce
1/2 tsp. salt
1/2 tsp. dry mustard
1/8 tsp. white pepper
3 c. chicken broth
1 1/2 c. half & half
1 c. beer
16 oz. (4 c.) shredded sharp white Cheddar cheese

Directions:

  • In large saucepan, melt butter; stir in flour. 
  • Cook 1 minute, stirring constantly, until smooth and bubbly. 
  • Add garlic, onion, Worcestershire sauce, salt, mustard and pepper; blend well. 
  • Gradually stir in chicken broth, half & half and beer; cook until thickened, stirring constantly. 
  • Add cheese; stir until melted.Heat gently, stirring frequently; do not boil.

I've been anxiously watching MSNBC and CNN for the last week or so, waiting to see how this whole U.S. economic crisis will turn out.  

If you want a better understanding of what's taking place in the U.S., and its implications for the world, watch this video.  It's 47 minutes long, but well worth the time.  It will open your eyes to the reality that our current economy is run using smoke and mirrors. Give it a minute to load.  It takes a about 15 seconds for it to start up.

I received a message today that someone clicked on a link I had posted for a job opportunity and found the company was no longer hiring. This person was justifiably disappointed, but also seemed a little peeved.

I do my best to make sure all the job opportunities I post are legitimate and that the companies are in the process of hiring. Occasionally, though, a company will place a link on their employment page, indicating they are hiring again, only to be flooded with applicants and promptly pull the link or put up a notice that they are "no longer hiring at this time."

This can happen within the course of a 12-hour day. In the morning, they may be hiring. By afternoon, they've shut it down due to huge response. This happens when word gets out on a work at home message board or other site. All I can do is post them when I see them and hope you guys get there before the jobs are filled.

Sometimes a person will find a post of mine through search. If it's an older post, the page that's linked to may be gone, or the company was hiring at the time of the post, but is no longer.

At any rate, I've had more positive than negative feedback. So I'll just keep trucking along, posting job opps as soon as I hear about them. I love to hear that someone has found a work at home job by visiting my site. ;)

The Mysterious Case of the Shrinking Cereal Box

About a week ago, my teenage daughter and I were in the grocery store, when she picked up a box of cereal and as she was putting it in the cart said to me, "This box looks different."  "Different?" I said.  "What do you mean?"

And then I had a closer look.  And she was right; it was different.  It had the same picture on the front, the same name, and at first glance, the same packaging.  But what formerly had been a 10-ounce box or cereal was now an 8.9-ounce box.  And although it was just as tall as before and appeared, on the shelf, to be the same, the width of it had clearly shrunk.

One thing that was still the same?  The high price.  So we were getting less cereal per dollar than we were a month ago.  Having a look around my local grocery store this week, I've found numerous instances of the same type of downsizing taking place.

So pay attention.  That box of cereal on your grocer's shelf may look the same.  But have a closer look.  MSNBC.com has an interesting article on this incredible shrinking packaging wave that's taking place.  It's "Shrink Ray" Hits Consumers' Wallets by David Ushery and Alex Johnson.  Read more about it and let me know what you think.

No-Bake Almond Bark Cookies Recipe

 
Here's an easy no-bake treat.

Ingredients:
  • 2 1/2 lbs. almond bark
  • 2 c. peanut butter
  • 4 c. Rice Krispies
  • 2 c. mini marshmallows
  • 1 c. salted peanuts, chopped
Place almond bark in a microwave-safe bowl and melt, stirring occasionally.  Add peanut butter and continue stirring until smooth.  Add the rest of the ingredients.  Drop by the teaspoon onto waxed paper and allow to set.  Enjoy!

Work at Home Moms: Where's the Appreciation?


If only the Ego Repair Hotline actually existed. With three teens and no other adult in the house, I sometimes feel like the "Invisible Working Woman." Where's the love? Who's going to tell me I've done a great job or congratulate me when I've met a goal? Nobody.

Unfortunately, the lack of positive feedback is just a simple fact of working from home. I have been fortunate enough to work for a company that will send out a note to let me know when a client has been really happy with the work I've done. But on a day-to-day basis, there's no one here to pat me on the back and encourage me to keep going.

I feel lucky to be able to work from home, and I guess the lack of positive stroking is a small price to pay for this convenience. At the same time, if anyone knows the number to the Ego Repair Hotline, please share.

There are a bazillion ways to make money on the Internet. But one of the easiest is creating Squidoo Lenses and profiting from the revenue generated from them. First of all, Squidoo is super easy; you can build a basic lens in about 15 minutes. And they rank high in Google's search engine results, so they're traffic magnets.

If you choose your keywords carefully, you can rank high in Google for those keywords pretty quickly. Long tail keywords, those which are more specific within a chosen niche, will generally do better. That's because there will be less competition for your terms.

Not only will you benefit from the shared revenue model of Squidoo, you can also sell affiliate products, your own Cafe Press designs, or direct traffic to your main Web site. It's all in the numbers with Squidoo. The more quality lenses you build, the more search engine traffic you will generate, and the more money you will make.

Finally, you can make money through Squidoo's own affiliate program. When someone signs up through your link and makes their first $15, you make $5. Squidoo pays through PayPal, and you can set your minimum payout as low or high as you like.

Kids: How Much Exercise is Enough?

 

My kids have always been fairly active.  One of my girls, a competitive swimmer, swims 12 to 15 hours per week, and sometimes I worry that she's exercising too much.  Her coach assures us that she could and should be working out more, in order to be truly competitive.  Frankly, I think it's more important that she's having fun.

But how much is too much?  How much is enough? The New York Times recently published an article entitled  How Much Exercise Do Children Need? by Gina Kolata.  I was surprised by how much we still don't know about what affects childhood activity has into adulthood.  Have a look.

Do You Squeeze Every Last Drop Out of Your Stuff?

 
This might seem like a strange question.  But in a tough economy, it's an important one.  Do you buy a new car every year or two?  Or do you buy a car and drive it 'til it gives out? 

I bought a 20-year-old Volvo a little over two years ago, and I just finished making payments on it in August.  And God willing, I will probably drive that little car 'til it just won't go another mile.  Why?  Because it gets me where I want to go, and I don't owe a dime on it.  I love the feeling of not having a car payment.  It's great!

I feel the same way about clothes.  I buy most of my clothes at the local Goodwill.  Yes, someone has worn them before. But they've still got a lot of wear in them, and I intend to wear them out!  My kids love the hoodies I bring home for $3.  I've also had really good luck with T-shirts for them. 

I find lots of great stuff for the house there - dishes, decorations, lamps, toasters, coffee makers, printers.  And you can't beat the price on books - 50 cents for softcovers, $1 for hardcovers. 

My point?  These are all things that someone else didn't want or need anymore.  But they still have lots of life in them.  And in these tough times, being able to squeeze every drop out of what you have is important.

IRS Seeking Bilingual Spanish/English Customer Service Agents to Work from Home

 
The IRS is seeking bilingual customer service agents nationwide for work-at-home employment.  This is a seasonal opportunity, with the possibility of permanent employment by application to NTI (National Telecommuting Institute).  This opportunity is open to both disabled and non-disabled applicants.

Customer service agents will be performing customer service for clients by phone for the IRS Forms Publications Call Center.  The work is fast-paced and includes downloading and entering information over the Internet.  A minimum of 20 to 30 hours per week is required January through March.

6. Keep in contact with your customers, send out a newsletter at least once a month to keep in contact and inform your customers of any special offers.

7. Use Google analytics to track your visitor’s behaviours. This is an excellent tool for tracking what people do on your website and what they don’t. This is invaluable information and it’s free.

8. If your budget permits start a pay per click campaign to sell you products while you’re waiting on your SEO taking effect. More on SEO on a moment.

9. Get some SEO servicesfrom a company that knows what they are doing, this will save time and money in the long term.

Risque Recipe: (Three-Letter Word that Starts with "S" and ends with "X") in a Pan

 
That's right.  I'm going a little risque today.  With a name like this, how can you go wrong?  The reason I'm not using the actual three-letter word?  Well, it seems that word is considered a "stop word" by Google.  And when I used a stop word once before, I got several days of weird ads and PSA's.

Ingredients:
  • 1/2 cup melted margarine
  • 1 cup chopped pecans
  • 1 1/2 cups graham cracker crumbs
  • 1 (8-ounce) package cream cheese
  • 1 cup confectioners' sugar
  • 4 cups Cool Whip, thawed
  • 1 (3.9 ounce) package instant chocolate pudding mix
  • 1 (3.4 ounce) package instant vanilla pudding mix
  • 3 cups milk
  • 1 (1 ounce) square unsweetened chocolate, melted
Directions:
  1. Preheat oven to 350 degrees.
  2. In a medium bowl, mix together margarine, pecans and graham cracker crumbs, then pat into a 9x13 inch baking pan. Bake in the preheated oven for 20 minutes.  Allow to cool completely.
  3. In another bowl, beat together the cream cheese and confectioners sugar until smooth, then fold in 1 cup of whipped topping. Spoon this mixture onto the crust.
  4. Prepare chocolate and vanilla puddings. Allow pudding to set before pouring on top of the cream cheese layer. Spread remaining whipped topping (3 cups) over the pudding layer, then swirl melted chocolate throughout the whipped topping.
  5. Cover and refrigerate for about an hour. Keep uneaten portion frozen.  Slice off pieces and allow to thaw before eating.  Enjoy!
