Found this recipe on Cooks.com. It's my kind of baking - easy, with as few ingredients as possible. I'll have to give it a try.
Ingredients:
1 (9 inch) pie shell
1 1/2 lb. peaches (or 3 c.)
2 eggs
1 c. sugar
1/4 c. flour
Dash of salt
1 c. heavy cream
1 tsp. vanilla
1 1/2 lb. peaches (or 3 c.)

- Place peaches in pie shell. In bowl, beat eggs slightly.
- Blend in sugar, flour and salt.
- Stir in cream and vanilla and blend well. Pour over peaches.
- Bake at 375 degrees for 1 hour.
