Peanut Butter Banana Bread Recipe

Mmm... crunchy peanut butter and bananas. In case you haven't figured it out yet, I like my desserts and sweet breads. Had to share this one.

Ingredients:

1 3/4 cup sifted self-rising flour
1/3 cup shortening
3/4 cup crunchy peanut butter
2/3 cup sugar
2 eggs, slightly beaten
1 cup mashed ripe bananas

Directions:
  • Sift flour. Then cream shortening and peanut butter in a large mixing bowl.
  • Add the sugar gradually until mixture is light and fluffy.
  • Add eggs. Beat well.
  • Stir the flour into this mixture, then the bananas. Mix well.
  • Spoon into a greased loaf pan.
  • Bake at 350 degrees for 1 hour.

I'm Listening to that Devil Music

Sometimes when I'm working, I need to take a break for a few minutes and just think about something else.  I was surfing around today and came across AOL Radio Network.  It's got over 350 free online radio stations.  I'm a big fan of the classic rock stations.  Love me some '70s music!  Check it out.

The cartoon above made me think about a story my mom told me about the time she brought home her first Elvis record.  It was the 1950's.  She was probably about 16 or 17.  And my grandfather, who thought Elvis was the devil incarnate, broke the 45 over his knee.  What would he think about today's music?  I'd love to know.

Easy Chocolate Cheesecake Recipe

Just what I love.  It's easy.  It's chocolate.  It's cheesecake.

Ingredients:

1 and 1/2 cups Nestle's semisweet chocolate chips
1/2 cup sugar
11 oz. Philadelphia Brand cream cheese
1/4 cup butter or margarine, softened
2 cups Cool Whip, thawed
1 ready-made Graham Cracker crust
Shaved chocolate for garnish
Additional Cool Whip for garnish

Directions:
  • Melt the chocolate chips in a saucepan over low heat or in the microwave (my choice), stirring constantly.  Let cool.  
  • In a large mixing bowl, combine the cream cheese, sugar, and butter, and beat until of a smooth consistency.  
  • Blend in the chocolate slowly and fold in the Cool Whip until blended.  
  • Spoon the cheese/chocolate filling mixture into the graham cracker crust and cover.  Chill in the refrigerator until firm.  
  • Garnish with Cool Whip and shaved chocolate, if desired.

                I stayed up too late last night watching Larry King. He had Bill Nye, the Science Guy, and several other "experts" arguing the existence of UFO's and aliens.

                Poor Bill Nye. One of the guests even poked fun at him, asking if he had come to his conclusion that aliens didn't exist using baking soda and vinegar.


                As for myself, I believe aliens exist. Call me crazy, if you will. This cartoon seemed apropos.

                AOL launched its new personal finance site, WalletPop.  And I have to say it's loaded with great information, useful tools, and valuable financial advice.  Go over and have a look.

                Lemon Cheese Ball Recipe


                A great snack for summer entertaining!

                Ingredients:

                1 8-oz. package cream cheese, softened
                1/4 cup butter
                1/2 cup confectioner's sugar
                1 tbsp. powdered lemonade mix
                1/4 cup graham cracker crumbs

                Directions:
                • In a medium bowl, mix everything except for the graham cracker crumbs.
                • Cover and refrigerate mixture for 3 hours, then shape into a ball and roll in graham cracker crumbs.
                • Serve with crackers.

                Can You Trick Yourself Into Saving Money?



                I went to the grocery store last night and spent $25 on a small bag of groceries. I wasn't even buying the expensive stuff: meat, milk, detergent, etc. I am amazed at how much the cost of food has gone up in the last month or so. One goal of mine this year is to actually save some money for emergencies.

                But how do you save money, when you're already struggling to pay bills, put food on the table, heat and cool your home? How do you put money aside, when there's not enough to go around in the first place? I found an article at LifeHacker that gave me some ideas.

                I don't think freezing credit cards in a block of ice will help anyone. I don't use credit cards anyway. But frankly, if I wanted to use a credit card, and it was frozen in a chunk of ice, I'd run some hot water over the darn thing and get myself to the mall.

                Crop Circles for Dummies


                I was watching the Mel Gibson movie Signs the other night. If you've never seen it before, I'll give you a brief recap. Mel Gibson is a preacher who lives on a farm. And all of a sudden, a crop circle shows up in the middle of one of his fields.

                As it turns out, the crop circles, which are showing up all over the world, are actually landing directions for the aliens that are about to invade. It's a pretty good movie until the end, when we find out...nope, better not spoil it for you.

                Anyway, this struck me as funny.

                Are You Too Emotionally Invested in Your Job?

                I read an article yesterday at The Simple Dollar that really got me thinking. Basically, the author of The Difference Between a Job and a Career explains the difference between a job you work to put food on the table and a career. Of course, I knew there was a difference. But I never really thought about what the difference might mean in terms of emotional investment.

                How much emotional energy should you invest in something if it's only a way to make money, but has no possibility of advancement? Sure, you should do the job you're getting paid to do, and to the best of your ability. But should you let it stress you out? Should you be saving that kind of energy for more important endeavors - your family, for instance?

                I found the article gave me a new perspective on my work. Read it and let me know what you think.
