I've been having a craving for strawberries lately. They're not in season around here until the end of this month. But they're showing up in the grocery stores now, and they seem to be of pretty good taste and quality.
I found this scrumptious sounding recipe for strawberry sour cream bread. It's originally from the Country Road Bed and Breakfast in Agra, Oklahoma. And I had to share it with you guys.
Ingredients:
1/2 c. butter or margarine, softened
3/4 c. sugar
2 eggs
1/2 c. sour cream
1 tsp. vanilla extract
1 3/4 c. all purpose flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/4 tsp. ground cinnamon
3/4 c. chopped fresh strawberries
3/4 c. chopped walnuts, toasted, divided
Directions:
Cream butter and sugar in a mixing bowl until fluffy. Then beat in eggs, one at a time. Next add sour cream and vanilla, and mix well. Combine flour, baking powder, baking soda, salt and cinnamon. Stir this into the mixture until all ingredients are moistened. Fold in the strawberries and ½ cup of nuts. Pour contents of bowl into a greased 8 x 4 x 2-inch loaf pan. Sprinkle the remaining nuts on top, and bake at 350 degrees for 65 to 70 minutes or until a toothpick inserted comes out clean. Cool for 10 minutes in the pan, then remove and place on a wire rack to cool completely.
